The Label That Was Never Really Written For You

Pick up almost anything in your kitchen and turn it over. There it is: a neat little grid of numbers, percentages, coloured traffic lights, the whole confident apparatus of nutritional information. It looks like science. It looks final. It looks, above all, like somebody sat down and worked out the truth and printed it for your benefit.

It wasn't written like that at all.

The nutritional label is, if you know what you're looking at, a fossil record of about sixty years of arguments – between governments, food companies, campaigners, and scientists who could not even agree on what the word "healthy" was supposed to mean. The grid you're squinting at isn't a summary of nutritional knowledge. It's the shape that knowledge made after it had been through a very long, very bruising fight.

The Serving Size That Serves the Manufacturer

Start with "serving size." It seems like the most obvious piece of information on the label – how much of this thing counts as one go. Except that in the early days of nutritional labelling, particularly in the US during the 1970s and 80s, manufacturers got to decide that figure for themselves. And they decided it with remarkable creativity.

A bag of crisps that any normal person would eat in one sitting became two and a half servings. A soft drink that holds 500ml was labelled per 250ml. The calorie count stayed low; the reality of what you actually ate stayed out of frame. Governments eventually legislated to fix "realistic" portion sizes, but those negotiations took years. And the compromises they reached still embedded manufacturer logic into what looked like a neutral fact.

The Percentage That Percentages the Wrong Person

The "% of your reference intake" figure – what used to be called the guideline daily amount – looks reassuringly mathematical. It is, but it's maths done for a specific imaginary person: a sedentary adult woman needing 2,000 calories a day, in the original formulation. Which is probably not you.

That figure wasn't chosen because it was the most accurate reference point. It was chosen partly because it was a round number, and partly because a lower daily calorie figure makes individual products look like a smaller percentage of your day – which suited manufacturers who had lobbied ferociously against anything that made their products look calorically significant. Scientists pushed for more precise, tiered values. The food industry pushed back hard. The round number survived.

The Traffic Lights Nobody Had to Follow

The traffic-light system – the red, amber, and green colour coding you see on the front of packs in UK supermarkets – has a longer and stranger history than the rest of it. The Food Standards Agency began developing it in the early 2000s as a front-of-pack system that any consumer could read at a glance without calculating anything. It tested beautifully. People understood it. Red meant a lot; green meant a little.

The food industry hated it. Red, they argued, would unfairly stigmatise foods. A long campaign by manufacturers pushed instead for a voluntary "multiple traffic light" version that put numbers alongside the colours – making it just complicated enough that the gut-reaction simplicity of colour coding was diluted. And then, crucially, it stayed voluntary. Manufacturers who didn't like what the colours said about their product simply didn't use it. This is why you'll find traffic lights on some products and not others, and why the ones that skip the system are often the ones that would have been lit up red.

What the Grid Is Actually Telling You

None of this means the label is useless. Salt content is salt content; sugar grams are sugar grams. The numbers, once you find them, are real.

But the architecture around them – what gets measured, what gets emphasised, how it's framed, what's on the front and what's buried on the back – that wasn't designed by a dietitian in a quiet room. It was negotiated, lobbied over, and redrawn again over decades, in rooms where food companies had more lawyers than consumer groups had chairs.

The label is a document of that process. Worth knowing, if only so you're a slightly more sceptical reader of the very next one you turn over.
